I've been obsessed with caesar salads for the past few months (I don't get it either) so I decided to try making my own veggie version. I (Justin) grilled up some squash and green onion (so yummy and sweet) and served it with tossed Farmers Market greens, shaved parmesan, and garlic croutons. Also I'm in desperate need of some new recipes for the pounds of squash and zucchini we always end up with from the Farmers Market, any ideas?

This salad looks really good - especially considering it was 11 below out this morning. Ah, to be in the throes of too much summer squash! ;)
ReplyDeleteI live in the south, Tennessee to be exact. Our summer garden is always overflowing with yellow squash and zucchini.
ReplyDeleteI always cook the yellow squash, sliced thin, with sweet onion in a skillet with good olive oil and a splash of balsamic vinegar when served.
Zucchini, in our house, is best when scooped out and stuffed with the stuffings cooked up in a skillet with more sweet onions, perhaps some ground beef if you are so inclined, peppers and S&P.
zucchini sitr fried with garlic and olive oil makes a good side dish for hot white rice.. also makes a good mix in wild mushroom ravioli.
ReplyDeletesquash is really yummy cooked in spicy red or yellow curry sauce, maybe with beef or on its own.. or just add a bit of curry powder and olive oil to toss the squash in before roasting. very hearty flavour...
